Baked Buffalo Chicken Fingers
I LOVE buffalo chicken strips, but I don't so much dig on all the fat and calories in the fried ones. These marinated baked ones are a fast and healthy alternative! You won't even miss the fried coating. I promise!
1 lb. skinless, boneless chicken breasts; thawed and cut into strips
1/4 cup Frank's Red Hot
1/8 cup soy sauce
1/8 cup apple cider vinegar
1/8 cup ketchup
1. Marinate the chicken strips with the hot sauce, soy sauce, ketchup, and apple cider vinegar in a large bowl in the fridge for at least 45 min. .
2. Taking the strips in small batches; dip them into the bread crumbs and lay them in a single layer on a cookie sheet sprayed with cooking spray.
3. Once all strips are on the cookie sheet, spray lightly with cooking spray and cook in a preheated 425 degree oven for 35-45 min, or until the desired level of crispness is achieved.
4. Serve with low-fat blue cheese dressing as a main dish on its own, or add to a salad!
Note: If you don't have breadcrumbs on hand, that's okay! I've had these without the breadcrumbs and they're great!
