Beet & Goat Cheese Burgers
I love the combination of beets & goat cheese… in restaurants. But I have had an extremely difficult time recreating appealing beet dishes in my own kitchen. Namely because of the bright pinkish-red dye that spills out from the beets onto everything in sight (my countertops, dishes, clothing, hands… you name it, it’s been dyed with beet juice). But on a recent dinner out, I saw Beet & Goat Cheese burgers on the menu, and I thought… ‘I could make that’!
