It is that time of year!  Apples galore!  This is a fabulous alternative to applesauce and cranberries for your Thanksgiving meal if you want to change it up a bit this year!


It  is an absolutely Heavenly dessert and so easy!

6 green apples or McIntosh (I use whatever the best deal is at the grocer or farmer's market)
2 1/4 cups water
1 1/2 cups fresh cranberries
3/4 cup packed brown sugar
3 tablespoons honey
6 scoops vanilla ice cream (optional)


Preheat the oven to 350 degrees F - 175 degrees C

Core the apples. Remove the peel from the top third only of each. Put them in a baking dish. Fill the cored holes with the cranberries until you can fit no more.

In a small saucepan, stir together the brown sugar, water and honey.
Bring to a boil, stirring occasionally to dissolve the sugar and honey.

When it comes to a boil, pour the mixture over the apples.
Bake for 1 hour in the preheated oven, baste with the juices about every 15-20 minutes or so.

Serve with a dollop of vanilla ice cream.

***HINT: I sprinkle a bit of nutmeg over the dollop of ice cream - it is pretty and tastes so good!
