Not only do I always bring my lunch, I also always bring the same thing all five days. This just makes shopping, prepping, and calorie-counting much faster. This week, I mooshed (yes... I just said "mooshed") two cans of black eyed peas in my food processor with some garlic, a teeny bit of water, and spices. I spread 1/5 of the mixture on a whole wheat wrap and cover that with some more veggies (ie: cucumbers and carrots that I chopped Sunday evening). On the side, I have a little steamed pouch of brussel sprouts (Green Giant For-One Steamers). One or two days I'll have a pear or apple instead of the sprouts though for a little treat. It's a cheap lunch that requires no cooking, just some prep on Sunday.
Does anyone have any tips as to easy lunches you can bring to work? I'm not much of a cook, and being in school full time and working 30+ hours means limited lunches.
