Brown Jasmine Rice with Mushrooms and Dried Cranberries
This was an easy-to-make side dish (or just a snack) and the flavors meshed very nicely together. Try adding other ingredients such as chopped onion, or a 1/4 C of quiona and top with slivered almonds...A great source of protein and calcium, too!
1 1/4 C Brown Jasmine Rice (I like Village Harvest brand)
3 C vegetable broth
3/4 C sliced mushrooms
1/2 C dried cranberries
Butter (Earth Balance) and salt, to taste
Bring broth to a boil and add the rice. Stir, reduce heat to a simmer and cover for 15 mins. Add the mushrooms and dried cranberries, cover and continue to simmer for another 5 mins. Stir and serve with a small pat of the butter and a pinch of salt. If you use quinoa, add it with the rice in the beginning and if you choose onion, saute them until tender and add with rice. Enjoy!
