Bruschetta- Tomato and Broccolini
I put together my tasty tomato bruschetta recipe last night! Since I’ve mastered this version (if I do say so myself) I wanted to try a new recipe. I had the most amazing, spicy, tender, broccolini bruschetta at Delarosa, so I thought I would give this alternative a try. I found this simple recipe here… let’s just say, both versions were absolutely delish and did not disappoint! Not only vegan friendly, but definitely super healthy!
Broccolini Bruschetta- Sautéed extra virgin olive oil, garlic, chili flakes, salt, pepper, and broccolini. Cooked until tender.
Tomato Bruschetta- Mixed cherry tomatoes, garlic, basil, extra virgin olive oil, salt, and pepper. Tossed in a wok before plating.
P.S. Everyone seems to think vegans can't have bread. I just want to make it clear, vegans can absolutely have some breads; think organic, fresh, or bread from a bakery. And remember, always read the ingredients.
