Candy Cane Cupcakes

A friend of mine wanted some cupcakes for a holiday party. He asked for the rum cupcakes that I had made for my pirate party, and these, chocolate candy cane cupcakes.

The cupcake itself is a basic chocolate cupcake, well... dark chocolate... but it's filled with chocolate mint filling and topped with a mint 7 minute frosting. The filling is a snap, you need instant chocolate pudding mix, cold milk, chocolate cool whip and peppermint extract. Make the pudding according to the directions on the box, mix in 1 Tbsp of peppermint extract and fold in the cool whip. Put it in the fridge for it too set up, it'll be kind of mousse like. To put it in the cupcakes I piped it in with a pastry bag.

For the frosting, I used this recipe but replaced the vanilla extract for mint. It came out super fluffy. To decorate, I just made the frosting half red, half white... carefully placing it in the pastry bag to pipe it on so it was more on the swirly looking side... then topped with a mini candy cane and some red sugar for some sparkle.

We have a "day After" party at my parents on, well the day after - so I might try these. I usually make some treats - so this will be something new - rather then just boxed cupcakes, brownies and food colored rice krispie treats. which is pretty much teh extent of my "baking"

And it turns out I understood less than I thought I did... :oops: I read the filling instructions as the actual cupcake instructions and I was all confused as to whether you were just serving a muffin cup filled with mousse like stuff. :rotfl: Oookay. Think we're all on the same page now. :howyoudoin:
