Caramel Apple Cheesecake-Easy!
I AM a cheesecake-aholic! My favorite cheesecake was always the simple New York style cheesecake, UNTIL I had this:
1 (21 ounce) can apple pie filling
1 (9 inch) graham cracker crust
2 (8 ounce) packages cream cheese, softened
1/2 cup sugar
1/4 cup caramel topping - Smuckers or any brand
1/4 teaspoon vanilla extract
Preheat oven - 350 degrees.
Remove 3/4 cup of apple filling and set aside. Using a spoon, fill the pie crust with the rest of the apple filling.
Beat together the sugar, vanilla and cream cheese just until smooth.
Add the eggs and mix well.
Pour over the apple pie filling.
Bake 35 minutes, or until the center of cake is set and let cool to room temperature.
Mix the reserved apple pie filling and caramel topping in a small saucepan and heat for about 1 minute.
Spoon the caramel-apple mixture over the cheesecake - spread evenly.
Sprinkle the crushed pecans over the top of entire cake. Refrigerate cake until ready to serve.
