Carrot Salad With Mint, Chili, and Feta
A friend sent me a delicious sounding Smitten Kitchen recipe for carrot salad with Harissa, feta and mint, and it looked so fresh and Springy I had to replicate it. I had the darnedest time finding Harissa (it's a North African hot chili sauce, which I had never heard of it) so I made a mixture of Sriracha, olive oil, and caraway seeds as a substitute and added it to my shredded carrots, mint leaves and feta. It was just the simple, spicy, and sweet kind of salad I love. And it almost looks like spaghetti, doesn't it?
