Greek Yogurt with Red Wine-Infused Dates, Toasted Walnuts & Honey

Cheddar and Bacon Biscuits


3 cups all-purpose flour
4 tsp baking powder
3/4 tsp salt
8 tbs/1 stick cold, unsalted butter
1 cup of finely shredded cheddar cheese
1/3 cup chopped fresh chives
6 slices bacon, finely chopped and fried until crisp
1 1/2 cups milk

1. Position rack in lower third of oven. Preheat to 400 degrees F. Spray biscuit pan with nonstick cooking spray.
2. In a large bowl, sift together flour, baking powder and salt.
3. Using a pastry blender or two knives, cut in butter until it all looks like coarse meal. Add cheese, chives, bacon. Using a fork, stir everything until mixed well.
4. Add milk. Using a rubber spatula, stir until combined.
5. Divide batter among your biscuit pans. Bake for 30 minutes or until golden. Test with a toothpick to make sure they're cooked through.
6. Let cool on a wire rack. Remove biscuits and Voila! A decadent and yummy treat.

I was just digging through my kitchen junk drawer and learned I actually own a pastry blender. I always wondered what the thing was for! Now I know, and I get to use it! Hey thanks! :)

Oooh, the little man LOVES cheddar muffins and bacon muffins. Never occurred to me to put them together! LOL Sounds wonderful!!

Hey Radarkitty, Step 3 is really simple. What you're trying to do is incorporate cold butter into flour. You can't mix it. You don't want it to melt, so what you're trying to do is cut the butter up into the flour so that it's in little pieces ("coarse meal"). If you don't have a pastry cutter, use the knives in parallel to cut up the butter or maybe even a fork. Hope that helps! And for all of you who think this SOUNDS good--wait til you taste it. It's SO YUMMY!. Do let me know if you try it!

Now see, this SOUNDS delish, and I would be interested in making it for a party I have to go to, but I'm confused about step #3. "Using a pastry blender or two knives, cut in butter until it all looks like coarse meal". I don't have a pastry blender, and I'm not sure how I am supposed to use 2 knives to make butter look like a coarse meal. I'm not sure what a coarse meal is??? Hmmm....
