Chicken and Butternut Squash Lasagne

It's my all time fave vegetable, delicious cooked in everyway!
My all time fave dish?
So why not mix the two faves together?!
The result was pure, creamy, melt in your mouth, comforting textures and flavors.
To tell you the truth, it was the BEST lasagne I have ever made!
So please, take the time to make this piece of heaven for your next dinner. :D

Chicken and Butternut Squash Lasagne

Chicken and Butternut Squash Lasagne


1 butternut squash (about 3 cups, cubed)
1 tbsp olive oil
3 tsp oregano
3 skinless chicken breasts (or use leftover chicken)
2 cloves garlic, roughly chopped
400g can of chopped tomatoes
no-cook lasagne sheets (or fresh, like me)
2 tsbp butter/margarine
3 tbsp plain flour
2 cups milk
1 tsp grated nutmeg
1 1/2 cups grated mozzarella cheese
salt and pepper


Preheat the oven to 400ºF/200ºC.

Peel and cut the butternut squash into cubes, drizzle with olive oil, sprinkle with 1 tsp of oregano, season with salt and pepper and roast until its tender.

Chop the chicken breasts into small pieces (or shred up leftover chicken). Heat a tbsp of olive oil, add the garlic and let it get nice and to a light brown color. Add the chicken and cook.
Now add the tomatoes and herbs, let it simmer for 5 minutes, turn off the heat and cover it.

Meanwhile, make the béchamel sauce (white sauce).
Melt the butter and then whisk in the flour. Let the paste cook for a minute then add the milk, a little at a time, whisking well so you wont have any small lumps (do this in medium heat).
If it gets too thick add in more milk, or if it isn't creamy enough add in more flour. Once its done add in the nutmeg and stir until its well mixed in.

In a 30cm square lasagne dish add a small layer of the chicken and tomato sauce (use about one third of the mixture, don’t worry if it doesn’t completely cover the bottom of the dish). Top with a layer of lasagne and top this with half the roasted butternut squash and 1/2 cup of cheese. Add another layer of lasagne, followed by chicken and tomato sauce. Top this with the remaining butternut squash and 1/2 cup of cheese. Add another layer of lasagne, top with the remaining chicken and tomato sauce, top with another lasagne layer, pour the white sauce all over and sprinkle the rest of the cheese on top.

Bake for 45 minutes and serve.

Thank you Roger - now - let us just leave it that way - it is always YOUR recipe when YOU cook it - because YOU do sth special with it - some blow it - some make it extra super special - i am fm a gastronomic family - father - his father my grandmother fm my mother - my dad (cooked/cooks for 2700 and maybe also only 5 people ;) ) - so he blew many things - but he also created masterpieces which nobody ever thought of. I can tell that my dad can be said in one line with P. Bocuse and i mean it - word for word... so - i am sure - you can always do sth better - when i make my Florentine cookies - i do not use regular cream - i do use special cream :) so they are so much differently - but i would not even reveal that in my recipes :) maybe now - we get closer to individuality :) you are you - you have your own special fingerprint and your own special character - :) wish you a great evening - i hv to go to school - (i am in Europe :) ) CYA

I didn't mean to post my original point twice btw (I just couldn't see it on screen). Yes, maybe I did sound like I was making an accusation, but it was the "all outta my head" tag which confused me. The recipes are exactly the same, pretty much word for word, so that seemed odd to me to have that tag. I love food, foodie people, sharing recipes, inspiring each other (indeed I came here specifically to use this recipe, and am following it today), and have drooled over some of CS's delicious looking photos. Credit where credit is due though in my world. And I agree wholeheartedly with you on what goes around comes around.

well - we have a saying in German: what you call into the woods - will return - Translated into "perfect English" it would be what goes round comes round - You are you - CS = CS - and i = i - so respectful and maybe once in a while only a question which is harmless like - oh - did you read this - hey - it looks exactly the same like your recipe - your comment sounded as if she was accused... and do we need that?

no - if you knew her - you would not have written that in the first place :) - no offense - i am just a very good friend of hers and i speak up my mind - yes - i know - that is VERY dangerous - yet - YOU DO EXACTLY THE SAME :)

How is my pointing out that the recipe was written before an insult?! I looked at her blog and thought there were loads of lovely things on there, so I'm not casting aspertions on her cooking (I'm even making the lasagne myself today), the recipe & photos are accompanied by a "all outta my head" comment which led me to believe the OP was saying she'd made it up, when as you can see from the link in the other blog someone else did.

Hi Sweet Roger104 - she tried it - she NEVER wrote it is fm her - and she cooked it - these are her photos - so please - if you have got time in your hands to insult others - then work in politics - they do that constantly - CS does a great job and is really a fantastic cook and baker - so pls - spend your time more preciously ok? :HUG: and xxx - ivee :)
