Chocolate spritz and mint icing cookie sandwiches

Easy chocolate spritz cookies are ready for our St. Patrick's day celebrating. I sandwiched mint, green icing between them for a leprechaun-worthy treat.
Chocolate spritz, makes appox. 3 dozen individual cookies, or 18 sandwich cookies

• 1 cup butter
• 3/4 cup powdered sugar
• 1 egg, beaten
• 1/4 teaspoon salt
• 1/2 cup cocoa powder
• 2 tablespoons milk
• 1/2 teaspoon vanilla
• 1 3/4 cups all-purpose flour

 

1. Preheat oven to 375 degrees F. Cream the butter with an electric mixer. Gradually add the powdered sugar and continue creaming. Beat in the egg. Add salt, cocoa powder, milk and vanilla. Gradually stir in the flour and mix well.
2. Using a small spoon, pack dough into the cookie press cylinder and “press” dough onto ungreased cookie sheets. Bake cookies in 375 degree oven for 10 minutes. Remove to wire racks to cool. Sandwich two cookies together with mint flavored frosting that you have tinted green.
