What do you think of Ina's (Barefoot Contessa) Scallops Provencal with Herbed Basmati Rice (http://www.foodnetwork.com/recipes/ina-garten/scallops-provencal-recipe/index.html) ? I think it's elegant and just fancy enough to set a good example for the rest of your meals. Plus it takes no time at all to prepare and scallops are in season right now so they shouldn't be too expensive (I think...)
Dessert wise, the pudding Lauren suggested sounds sooo yummy that I want it now! =P

For an hour of prep time, I would keep it simple. So maybe pick up a couple of cheeses, crackers and olives to nibble on before dinner. Maybe make a fish dish that can be cooked in the oven like this one Yum and serve with simple salad, potatoes or rice depending on your preference.
If you don't want to cook fish, a roasted chicken.
I think dessert is a must. So maybe bake your favorite cookies and serve with ice cream or maybe a pudding.

I'm not picky at all. I just mentioned it because so many of the people i cook for have allergies or a particular food they don't like. I'll have about an hour for prep time.
