"Cream" of Mushroom Soup

- 1 tablespoon olive oil
- 2 shallots, chopped finely
- 1 tablespoon garlic, minced
- 16 oz baby bella mushrooms, sliced (divided into two batches of 8 oz)
- 2.5 cups of chicken, vegetable, beef stock or water
- 1/2 medium head of cauliflower, grated or food-processed
- 1 can full fat coconut milk
- 1-1.5 cups of leftover meat, shredded (I used smoked turkey, but old chicken or whatever you need to get rid of works here)-- or add more mushrooms if vegetarian
- Salt and pepper to taste
