"Cream" of Mushroom Soup


    cream of mushroom soup
        • 1 tablespoon olive oil
        • 2 shallots, chopped finely
        • 1 tablespoon garlic, minced
        • 16 oz baby bella mushrooms, sliced (divided into two batches of 8 oz)
        • 2.5 cups of chicken, vegetable, beef stock or water
        • 1/2 medium head of cauliflower, grated or food-processed
        • 1 can full fat coconut milk
        • 1-1.5 cups of leftover meat, shredded (I used smoked turkey, but old chicken or whatever you need to get rid of works here)-- or add more mushrooms if vegetarian
        • Salt and pepper to taste
