Creamy Cucumber Salad
So, I walked to the mailbox over the weekend to discover that the latest catalog from my favorite spice house *cough cough* had arrived. Flipping through it today while in line at the Walgreen's drive-thru in my pajamas (don't ask), I experienced a moment of nostalgia. Before my eyes was THIS recipe from my childhood. Gram used to make it all the time as an accompaniment to her insanely delicious salmon patties. So simple and so wunnerful.
There are two differences, though. Gram would first toss a bit of salt over her colander-ed and sliced cukes for about thirty minutes before gently pressing the rendered water from them. (This crisps them up and makes for a less watery dressing.) And instead of the dried fines herbs, she simply seasoned the salad with fresh dill from her garden.
Come to think of it, there are two other differences. Walgreen's drive-thrus didn't exist back in the day. And even had they, Gram wouldn't have been found waiting in line wearing her PJs.
CREAMY CUCUMBER SALAD
3 medium cukes, peeled and thinly sliced
1 large yellow or sweet onion, peeled and thinly sliced
1-2 teaspoons fines herbs
1/4-1/2 teaspoon freshly ground white pepper
1 part apple cider vinegar (1/4 cup)
2 parts white sugar (1/2 cup)
3 parts heavy cream or half and half (3/4 cup)
Lob the first four ingredients into a bowl. Blend the dressing together in another bowl. Combine everything gently and toss, covered, into the fridge. Let the salad hang out for at least thirty minutes before serving, stirring everything periodically to blend the yummy flavorations.
