Crockpot Chicken Fajitas
Life is busy, isn't it? I just don't always have the time to make a fabulous dinner after a long day at work. I've started using my crockpot a lot lately as a great compromise. I get the fabulous dinner without all the work.
2 boneless, skinless chicken breasts (frozen)
1 15 oz can, corn (drained)
1 15 oz can, black beans (drained)
1 14.5 oz can, diced tomatoes
1 4 oz. can diced chiles
2 TBL taco seasoning
These are the easiest directions ever! Add all ingredients to your crockpot and carefully mix together. Set your crockpot on low for 6-8 hours. Shred the meat once you're ready for dinner. This mixture goes great in fajitas, as well as on salads. It's very healthy, as well!
