Easy Peasy Fairy Cakes.

It's my friends 20th birthday tomorrow and she's having a :bbq: to celebrate (although knowing April English weather, that ain't happening!). So a couple of my friends and I got together to bake her some cakes. I always say that you can't go wrong with a Nigella Lawson recipe so this is one I found on her website.

Easy Peasy Fairy Cakes.


125g unsalted butter, softened
125g caster sugar
2 large eggs
125g self-raising flour
half teaspoon vanilla extract
2-3 tablespoons milk
12-bun muffin tin lined with 12 muffin papers

half cup superfine sugar
2 large eggs
three-quarters cup self-rising cake flour
half teaspoon vanilla extract
2-3 tablespoons milk
12-cup muffin pan lined with 12 paper baking cups

Buttercream Icing (not Nigella, but from the back of the icing sugar box)

75g (3oz) Butter
17g (6oz) Icing sugar
a few drops of milk, warm water and/or vanilla extract


Preheat Oven to 200 C/400 F/Gas Mark 6

Basically put everything but the milk in your food processor and mix until completely smooth. You can do this by hand, which we did because we are poor students, and it still comes out fine, plus you get extra exercise. When all the other stuff is mixed add the milk whilst still stirring to make it a soft dropping consistency.

When making it doesn't look like it will be enough, but it really is. Spoon into cake cases and bake in the oven for 15-20 minutes or until they look done, or until you get really impatient and take them out anyway (guilty :oops:).

Whilst the cakes are cooling you can make the icing. To make the icing just put all the ingredients in a bowl and mix. Um yeah, not very technical, but it worked. This was enough to cover all our first batch and a few more of our second. Leave to set and then eat!

We decorated ours with jelly sweets and writing icing.
We also chopped up marshmallows in the middle of some before we put them in the oven, to make them all gooey.
The second batch we made chocolatey by adding the same amount of cocoa powder as the flour.
I also used Soya milk, and skipped the vanilla (we don't have any) and it turned out fine. So I'm guessing this recipe is good for adjusting however you want. Next time, we going to try them out with lemon or honey.

:rotfl: Jen if you try adding a different word every few months nobody would notice and think you just made up really cool sounding words. Kimpossible: the picture makes it look pretty runny, but it actually set quite well. Plus the picture was taken not long after the were iced. Believe me they look really yummy all packed up in my cake box!

I'm probably in the minority here, but these just don't look appetizing to me. I think it's the icing - it looks too runny for my taste.

Ah! Well, fairy cakes is a MUCH cuter name. I wish I could incorporate all these awesome Britishisms into my daily vocabulary but a.) no one would know what the heck I was talking about, b.) I would look extremely Gwyneth Paltrow and c.) no one would know what the heck I was talking about. :rotfl:

Yup Jen, we call Cupcakes, Fairy Cakes. They may be smaller, I think. But it's the same kinda thing. My grandma got me the Hello Kitty tupperware, I love it, it's so cute. :D
