Family and Waist Friendly Banana Bread
I experimented until I found something really moist...with very little fat and some fiber!
1/4 c. butter
1/4 c. of organic, nonsweetened applesauce
1 c. evaporated sugar cane juice (organic)
4 egg whites
1 tsp. vanilla
1 c. all purpose flour
1/2 c. organic wheat flour
1/2 tsp. salt
1 tsp. baking soda
1/2 c. reduced fat sour cream
1/2 c. chopped walnuts (optional)
31/2 overripe bananas smashed
Preheat oven to 350 degrees.
Mix the sugar, butter, and applesauce well.
Slowly add the flour and baking soda until smooth.
Fold in the bananas, sour cream, vanilla, and walnuts until well mixed.
Use nonstick spray to coat loaf pan.
Pour mixture into loaf pan and smooth.
Sprinkle cinnamon on top of loaf if desired.
Bake for 60 minutes until toothpick or fork comes out clean.
Cool in pan for 10 minutes.
Remove from pan, allow to cool on rack...or slice for hot outta the oven goodness!
