I love a good pasta salad recipe that isn't the same as all the others and doesn't require sour cream or mayo. This one has a tangy sauce and fresh veggies are a must!
Ingredients
Salad:
8 oz cooked, med shell pasta
2 C broccoli flowerets
1/2 C (1 med) chopped onion
2 med (2C) sliced yellow squash or zucchini (I used zucchini)
1 med red bell pepper, sliced into thin strips
Dressing:
1/2 C vegetable oil
1/2 tsp salt
1/4 tsp black pepper
3 Tbs lemon juice
2 Tbs brown spicy mustard
1 tsp Worcestershire sauce
1/2 tsp minced garlic
Directions
Cook macaroni according to package instructions. In a large bowl, combine all vegetable ingredients; stir in hot cooked pasta. Refrigerate 10-30 mins. In the meantime, in a small bowl, combine dressing ingredients and then mix with salad. Enjoy!
