Fig, Red Onion, and Wheat Berry Salad
Wheat Berry = possibly my favorite whole grain. I was just introduced to eating this often forgotten grain, and have been hooked ever since. It's chewy and firm texture can really stand up against a good dressing without getting soggy. The concoctions you can whip up with wheat berries is endless which is why I was thankful to have stumbled upon this gem of a recipe.
