Gluten Free Potato Latkes

Ingredients
2 boxes of Premium Hash Brown Potatoes (found at Costco) or other gluten-free hash browns (such as Ore Ida)
½ cup medium onion, peeled and chopped
1 large egg
½ teaspoon salt
½ teaspoon baking powder
3 tablespoons GFP All-Purpose Flour
Olive oil
Directions
To reconstitute potatoes, add hot water according to directions on the box of potatoes. Let stand for 10 minutes. If using frozen hash browns, spread in a thin layer on a large plate and microwave for 2-3 minutes or until soft. Add onions and egg to potatoes.
In a small bowl combined salt, baking powder and flour. Mix into potato mixture.Heat a skillet with enough olive oil to cover the surface. Add one generous scoop of the potato mixture into hot oil and brown on both sides. Repeat until all mixture is used.Serve immediately or refrigerate and warm in the oven when ready to eat.
Makes 20-24 pancakes.
