Tofu Banh Mi Collard Wraps with Wasabi Peanut Sauce

Hearty Whole-Wheat Muffins


Ingredients
1 c. Whole-wheat flour*
1 c. All-purpose flour*
2 tsp. Baking powder
1/2 tsp. Salt
1 c. Skim milk
1/4 c. Honey
1/4 c. Margarine, melted and cooled
1 Egg, beaten
Vegetable cooking spray

Preparation
1) Preheat the oven to 400 degrees. Combine the flours, baking powder, and salt in a large bowl, stirring well. Make a well in the center of the mixture. In a separate bowl, combine the milk, honey, margarine, and egg; add to the dry ingredients, stirring just until the dry ingredients are moistened.

2) Spoon the batter into muffin pans coated with cooking spray, filling each cup two-thirds full. Bake for 10 to 15 minutes or until lightly browned.

Exactly! They like them in oatmeal cookies too and I don't really.. I prefer raisins only. They just don't seem to fit.

Oooh I hear ya on the choco chips. There is a time and a place for them. And their place is not always in a muffin.

My family likes me to throw chocolate chips in once in a while too but I'm not a huge fan.. I'll do it for them but if it were up to me I'd make them without the chocolate. Brown sugar is GREAT on muffins :DROOL:

Yeah theyre really good! I'll find the recipe once I find my cookbooks hahaha. I like to sprinkle brown or white sugar on top of the muffins before I bake them, it's really :DROOL: I usually add walnuts to any muffin recipe as well unless someone complains about it beforehand :P
