Homemade Poached Chicken {And Chicken Broth}

I don't know about you, but lately I've been tossing chicken into almost every meal I'm eating. I use this recipe to poach chicken almost every week, and then use it for tostadas, enchiladas, salads, sandwiches, pretty much anything. Also, the broth after poaching the chicken is perfect chicken stock! I got two 32oz mason jars full that I pop into the freezer for later use. It's pretty much a win win.
