Hot Chilli Chicken Fajitas

Hot Chilli Chicken Fajitas

By Antony Worrall Thompson

 YUMMYTomato and Avocado Salsa: YUMMY

Preparation time 1-2 hours

Cooking time less than 10 mins

Ingredients

2 tbsp chilli oil
1 tbsp hot chilli powder
1 tbsp paprika
pinch of sugar
zest and juice of 1 lime
4 chicken breasts

For the Tomato and Avocado Salsa:
4 large tomatoes, deseeded and finely diced
1 red chilli, finely chopped
juice of 1 lime
1 small red onion finely chopped
2 medium ripe avocados, stoned, peeled and finely diced
2 tbsp olive oil
120g/8 tbsp freshly roughly chopped coriander/cilantro
salt and pepper

To Serve:
4-8 medium floured tortillas, warmed
1 small iceberg lettuce, shredded
150ml/¼pt soured cream
8 bamboo skewers, soaked in water overnight

Method

1. Mix together the chilli oil, paprika, chilli powder, sugar and the lime juice and zest. Cut each chicken breast lengthways into six strips. Add to the chilli paste, cover and leave to marinate for 1-2 hours.
2. Meanwhile make the tomato and avocado salsa. Place all the ingredients into a large bowl and stir gently to combine. Season with salt and pepper and place in a serving bowl.
3. Heat a barbecue or a ridged griddle pan.
4. Thread three pieces of chicken onto each skewer, place on the barbecue or griddle pan and cook for 3-4 minutes on each side until the chicken is cooked through.
5. Place the chicken skewers on a serving plate and hand around the tomato and avocado salsa, warmed tortillas, lettuce and soured cream and allow each person to assemble the fajitas themselves.

I made the fajitas and salsa last night!! TASTY!!!! The bf's favorite was the salsa and he doesn't really even like avocados! What a winner!

I was uploading the pictures of the pork and realized I had one of the salsa. Yours look much better though. I didn't have any red onions so I just used green onions. This salsa is so good, I will be making it on a regular basis.

No, don't!! My "Why Pirates Are Way Cooler Than Ninjas" mentions Vanilla Ice in connection with a ninja movie. I think I must be the dork. ;) Arrrrrrrrrrrrrrr!
JennaV JennaV
No worries...I remember that DWG!
thedrywallgirl thedrywallgirl
Okay, I feel like a dork now...
jennifer76 jennifer76
Noooo... I don't remember that!! OMG, I missed something special, I fear. LOL!!

Ninja! Ninja RAP, LMAO Jen!!! Remember the Teenage Mutant Ninja Turtle movie where Vanilla Ice sings his turtle rap?!
jennifer76 jennifer76
You're welcome, Wynter. Credit goes to Twink, though. Please tell me how you like them!

You know what else is great is flavored vinegars, too. I miss Hawaiian Chili vinegar. I'm trying my darndest to grow a Hawaiian Chili plant outside right now. We'll see. I'm a plant killer. But hubby's home, and he's a plant miracle worker. (We balance.)
wynter wynter
Thank you! I'm about to order some now before I head to bed. :)
jennifer76 jennifer76
Oooh, and your link has even more that I didn't know they made! Truffolio, Garlicolio...those sound good! What on earth is Aranciolio. Sweet C? Where are you? Her hub's Italian. She'll know.
jennifer76 jennifer76
Yes, Wynter! And cheaper than Amazon. LOL. Good job!!
wynter wynter
*Are these them?* LOL I think it's time for bed! Reading the descriptions, these sound so good! Why have I never heard of flavored oils before?
jennifer76 jennifer76
Ha HA! Good ol' Amazon.com. http://www.amazon.com/s.html/104-6320732-6740735?ie=UTF8&node=3580501&brand=Colavita They have the limonolio, basilolio and pepperolio by Colavita. I've only had the limonolio and pepperolio but we loved them both.
wynter wynter
Is this them? http://64.41.112.175/Merchant2/merchant.mv?Screen=CTGY&Store_Code=G&Category_Code=FO
jennifer76 jennifer76
Ok, its coming back to me now. It was Colavita. And the lemon is called lemonolio. I couldn't get limonata out of my head. But, that's alcohol. Does that mean I have a problem? I'm looking for an online source for it right now.
wynter wynter
Thanks! I'm scared to order edibles online unless the company has been recommended by a real person...and not their fake recommendations or advertisements :)
jennifer76 jennifer76
LOL, Wynter. The ones I had were actually made by a common olive oil company, but I ordered them online. I was actually thinking about them the other day and wanting more. Let me go do a search.
wynter wynter
Where do you find that stuff, Jen? LOL I live in a rinky dink town where I have to drive 30 mins just to get to the nearest grocery store (which is a Super Wal-Mart) lol
jennifer76 jennifer76
LOL @ DWG chewing her arm off! Too funny. :)
jennifer76 jennifer76
Wynter - you could probably just mix some chili powder in with olive oil or something. But you should look into flavored oils. I love chili oils, you can even get lemon oils (which is great for chicken and fish) and all kinds of neat stuff.
thedrywallgirl thedrywallgirl
NO work tomorrow ladies! WOOT WOOT!! Dwg is up all-night-long, lol!! ;)
thedrywallgirl thedrywallgirl
LOL JENNA!
wynter wynter
oh wait...chili oil? I read chili powder the first time! lol Where do you find chili oil? hmm.... It's just 2 Tbsp...probably could substitute it with another type of oil, maybe?
