I need potluck veggie suggestions!



I'm hoping you guys can help me out with some suggestions.

My boyfriend and I are having a potluck at our place. There will be about 20 people. I sent out a list with categories (main course, side dish, appetizer, salad, dessert, etc.) and had everyone sign up to bring two things.

Nobody is bringing any veggies, though. So I figure that I should make a veggie dish that's simple and will feed 20 people. And, unfortunately, my boyfriend is making a ginormous ham so I won't be able to make the veggies in the oven.

Does anyone have any good stovetop veggie recipes?

I hear ya Jinx. I'm more of the eat a little of everything, keep it healthy for the most part, make sure to exercise philosophy. I don't do well with cutting anything out of my diet completely.. especially if it's a fruit or a vegetable.

What about something you don't even need to cook? Like...celery and dip, perhaps? Does it have to be veggies? 'Cause you can whip up a fruit salad...some pineapple, watermelon, kiwi, grapes...

my favorite thing to do is to just take as many colorful veggies as you can (yellow squash, red peppers, zuccini, mushrooms, corn, etc. etc.), cut them into bite-size pieces and saute them in good olive oil. add some coarse sea salt, pepper, and balsamic vinegar for a sweet-ish flavor. make sure not to overcook so the veggies keep their flavor and crunch. this is most easily done in a casserole dish in the oven but it transfers well to a pan. and it looks beautiful next to any other dish ;)

I think suggestions like that come from the way foods break down and react in your system. Like some foods can be more beneficial if eaten with other certain foods. Something like that, lol. "Like MySpace, only more arrogant"

God that's so much work :O I kind of have to take issue with weight loss programs that cut certain fruits and veggies out of your diet.. I understand it's carb/sugar control but good Lord, fruits and veggies?!

Some diets suggest you wean off them. Like, after reaching your goal, diet every other week or whatever to maintain the weight. "Like MySpace, only more arrogant"

No, Atkins isn't healthy to do for a long time. I've done it for a few weeks at a time, when I want to look good for some big event. I'd cut out carbs, lose 10-15 pounds, look good in my dress, and then gain it right back. Even that is pretty unhealthy, though. I haven't done it in a few years.

I went to HS with a guy that did Atkins and lost major weight.. What do you do once you stop with the diet though, wouldn't you just gain it all back? You're not supposed to keep up Atkins for life are you?

yeah Twinkle.. I lost 15 pounds on Atkins about 3 years ago.. I just didnt keep it up and got to busy with work and stopped excercising :(

I'd love to make green bean casserole but I won't be able to use the oven, because the big ham will be in there.

My boyfriend hates asparagus but it's my favorite veggie. The only way he'll eat it is if I wrap it in prosciutto and cover it in Swiss cheese sauce. It's very yummy, but I like it just plain, too.
