It depends on the oyster variety and where they are from...but imagine how the fresh the ocean smells. Oysters taste like that. So sometimes they will be almost really salty and sandy flavor and others are much more mild. They are really tasty with a dash of lemon juice or shallot vinaigrette.
The texture looks worse than it is, I have never thought oh that was slimy. I always think wow the ocean is so tasty! If you get a chance pinknc and give them a try just make sure that oysters are in season, any month without a r in it (I think is the saying)!
