Japanese Soy Chicken


Acknowledgements: This is a George Foreman recipe. It is meant to be done in a George Forman Lean Mean Fat Grilling Machine (R). I however bake it in my oven.

I modify this recipe a little to suit my tastes. One of the biggest modifications that I make is I use tablespoons instead of teaspoons.

¼ cup low sodium soy sauce – I use Citrus flavored Soy Sauce
1 teaspoon of vegetable oil – I use Olive Oil
1 teaspoon Asian Chile oil or pepper flakes
1 clove garlic, minced or 1 teaspoon of crushed garlic paste
1 teaspoon ground ginger – Optional
½ teaspoon black pepper
1 teaspoon clover honey
4 boneless, skinless chicken breast halves – I generally don’t half the breast. I usually make 2 whole breasts.
To make:
In a flat glass pan, combine the soy sauce, oils, garlic, ginger, pepper and honey. Mix well to dissolve the honey. Add the chicken breasts and turn to coat. Cover and refrigerate 1-4 hours or overnight.
Pre-heat oven to 375 degrees. Place chicken in a casserole dish and pour a little of the marinade in for the chicken to cook in. Bake for 45 minutes.

Suggestion: Serve with Pepper Jelly.
