Lemon Curd Thumbprint Cookies
Earlier this week, I was very privileged to help organise a Sport Relief Bake Sale at work. We raised over £280 for charity and one of my baking contributions was some Lemon Curd Thumbprint Cookies. These were an adaptation on my Coconut & Almond Thumbprint Cookies and my attempt to use up some left over lemon curd. You really could use almost any type of jam but I just have a thing for anything zesty. I love how the toasted coconut contrasts the zing of the lemon curd in this cookie.
