Lemon-Rosemary Salmon


This was very easy and quite delicious. My fillets took about 25 minutes or so to cook, but they were reasonably thick.

Lemon-Rosemary Salmon

Ingredients

1 lemon, thinly sliced
4 sprigs fresh rosemary
2 salmon fillets, bones and skin removed
coarse salt to taste
1 tablespoon olive oil

Directions

1) Preheat oven to 400°F
2) Arrange half the lemon slices in a single layer in a baking dish. Layer with 2 sprigs rosemary, and top with salmon fillets. Sprinkle salmon with salt, layer with remaining rosemary sprigs, and top with remaining lemon slices. Drizzle with olive oil.
3) Bake 20 minutes in the preheated oven, or until fish is easily flaked with a fork.

That's what we were watching when he found out that it was a bottom feeder and refused to eat it at any point in the future. :rotfl:

I love Tilapia!!! I even watched an episode of "dirty jobs" and they said how they eat all the crap. I still eat it all the time though, its cheap and i can bring it to work because it doesnt have a really strong "fishy" odor. I may try this recipe with Tilapia though.

I like salmon 'cause it's not a super "fishy" fish. Halibut is a delicious fish 'n' chips choice...

Tell him that chickens will eat anything except banana peels. Even chicken and eggs. Chickens are worse than a garbage disposal. I don't like any kind of fish or seafood either. Hubby is the one who likes it. I rarely cook it because of the smell, but if I season the hell out of it and bake it I can usually stand it. He's going halibut and salmon fishing in Alaska this summer, so I guess I'd better get used to cooking fish. Bookmarking.

and about the "bottom feeder" thing. i have heard other people say that. am i to believe that other types of animals that humans consume do not eat crap (literally) only certain types of fish? if i were to worry about that then i would have to go back to being a vegetarian.

my husband has tried salmon and STILL says it wasn't good. he will admit it was better than other types he has eaten but he just will not give on eating fish. however he will eat tuna fish. :oy: men.

Man. :oy: My husband refused to eat fish for most of his life because a fish bone incident when he was little. He would just say he didn't like fish. Then I started making salmon on a regular basis and his options were to eat it or make his own dinner. He now loves salmon and even requests it. His favorite was the sake ginger glazed salmon posted in KG.

Jonathan turned his nose up a bit and was like, "Oh, we're having salmon? I don't really eat a lot of fish." I told him to deal with it, and he really liked it. I am trying to put a bit more fish in our diet, so he'll have to get used to it at least once a week. He loved tilapia until he found out that it's a bottom feeder. :rotfl:

and yes i know "hen" is chicken but when i was little if she had told me what type of chicken i never would have eaten it. :rotfl: oh never mind it is too early to explain. :rotfl: my head hurts.

I wish I could just serve it without telling them what it is like my Mom did with me when I was little with hen (telling me it was chicken). But fish is harder to get away with.

Yes! And they made the biggest scene. :oy: All gagging and "i'm gonna throw up" and all that crap. And I made it SOOO YUMMY. There is something about the fish texture they just refuse to like.

Sounds very simple and tasty. I love salmon, but I've never cooked it with rosemary before.
