Mango & Saffron Cookies

On a visit to my local asian supermarket I came across some diced mango. This is mango that has been dried so has a chewy texture like dried apricots. I wanted to emulate the flavour of a mango kulfi ice cream so decided to pair the mango with saffron.
Saffron is one of the most expensive spices in the world, so a little goes a long way. It's been around for thousands of years and is traditionally used in Indian sweets for it's unique flavour, colour and scent. It usually comes in a little air tight container and is stored in a cool dark place.
These cookies taste even better the next day... If there are any left!
