Mexican Nopales

On my last day of cooking school, our class made a huge Mexican feast to chow down on. These nopales were one of my favorite dishes of the day: prickly cactus leaves, grilled and then topped with chipotle salsa, oaxacan cheese and peppers and onions. YUM!
