What can I say about this one? AM-AH-ZING... Me and my mum ate the entire thing in 5 minutes flat! It would be really convenient if you have an icecream maker. I didn't, and I had to keep taking it out of the feezer and blending it every coupla hours. Well, hope u like it, enjoy!

Ingredients

1 1/4 cups (275g) sugar
1 1/4 cups (310ml) water
2/3 cup fresh mint leaves
1/3 cup (80ml) lime juice
600ml thickened cream

Directions

1) Combine sugar and water in medium pan, stir over heat, without boiling, until sugar is dissolved. Simmer, uncovered, without stirring, minutes. Cool slightly. Blend or brocess syrup with mint and juice until pureed. Strain, and discard mint. Pour mixture into lamington/brownie pan, cover; freeze until almost set.
2) Chop icecream roughly, beat in large bowl with lectric mixer, or process until smooth. Beat cream in small bowl with electric mixer until soft peaks form, fold into icecream mixture, in several batches. Pour mixture back into pan. Cover and freeze until almost set.
3) Chop icecream roughly, beat in large bowl with electric mixer, or process until smooth. Pour into loaf pan, cover; freeze until firm.
4) Serve, and accept compliments with a smile!
Serves 4 to 6 people... (or 2 in my case!)
