
Ingredients
1 Pound Jicama, peeled and cut or julienned into skinny sticks
6 navel oranges, segments cut free from their membranes
3/4 small red onion, peeled and sliced into rings
1/2 Cup minced fresh cilantro or watercress leaves
1 1/2 tablespoons fresh lemon juice
1 teaspoon salt
3 tablespoons toasted pine nuts
Directions
In a large bowl, combine all the ingredients except the pine nuts. You can make this salad one day in advance and refridgerate it. Sprinlle each serving with nuts before serving.
