Peanut Butter Surprise Cookies

These cookies should actually be called "Surprise, these are the best cookies ever" but peanut butter surprise cookies will have to do.

Peanut Butter Surprise Cookies


1/2 cup creamy peanut butter
4 tablespoons unsalted butter, room temperature
1 cup packed light-brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour (spooned and leveled)
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup granulated sugar, for rolling dough
36 mini peanut butter cups, chilled and unwrapped


1. Preheat oven to 350 degrees. Using an electric mixer, cream peanut butter and butter in a mixing bowl until smooth. Add brown sugar; beat until combined, scraping down bowl as needed. Add eggs and vanilla, and beat until incorporated.

2. In a small bowl, whisk together flour, baking powder, and salt. With mixer on low speed, gradually beat in flour mixture in two batches.

3. Scoop off dough by the tablespoon; roll into balls. Place granulated sugar on a plate; roll balls in sugar, coating completely. Place 2 inches apart on a nonstick insulated baking sheet.

4. Bake until cookies begin to puff up slightly, about 7 minutes. Remove from oven. Press one peanut butter cup in center of each cookie. Return to oven; continue baking until cookies are golden brown and chocolate has begun to melt, about 6 minutes more. Let cool at least 10 minutes on baking sheet before transferring cookies to rack to cool completely.

Yields: 36 cookies

Don't forget a big tall glass of milk with these, trust me you will need it!

Yep they are to die for but next time I make them I'll just rub them on my hips and thighs because that's where they eventually end up!!! LOL

I used to make these same cookies, but with a Hershey's Kiss in the middle instead of a peanut butter cup. I can't wait to try your version...YUM!

There is a cookie shop by me that make something similar, but in the middle they slice a snickers bar about the size of the reese cup and lay it flat for the middle of the cookie. It is divine! I could eat cookies for breakfast, lunch, and dinner... so I will be making this for sure! (my Girl Scout Cookies are almost gone, so I'll have to have my fix by tomorrow night I'm sure!)

I have had these cookies before and they are scrumptious. It was from a bakery and they cut the peanut butter cup in half and placed it on the cookie so it looked like a basket. Then they painted flowers made out of icing coming out of the basket. I hope that makes sense what I am trying to describe. They were adorable and oh so yummy!!

Too bad, finn lover, I thought they would be a little divine cup of nutella! Perhaps, I will have to experiment to see if I can up with something better in my kitchen! :) BTW, Twinkle, recipes and quizzes are now showing up in unreads, so you can stay on top of the deliciousness! Team, I'm sorry to tell you that they are disappointing (the Reese's Hazelnut Creme cups). I thought they would taste like Nutella, but they don't. They have a lighter, buttery hazelnut taste. I'm not crazy about them. Maybe you'll get them in the States soon, I saw them for the first time here in Canada last week.
