A friend shared this recipe with me, and it has been a favorite in our family around Christmas since then. It is so easy to make. Santa gets some of this along with his cookies and cocoa. ;)
White Chocolate Peppermint Christmas Bark:
2 pkg Tollhouse white chocolate chips
12 large red & white peppermint candy canes - crushed up
1 tsp peppermint extract
Melt the chips (use one whole bag and about 3/4 of the second) over a double boiler- stirring constantly. Do NOT let any steam hit the chocolate, or you will get "pre-mature clumping"
Remove from heat and stir in crushed up candy canes and extract.
Spread on cookie sheet(s) covered with wax paper
Cool in fridge for at least one hour
Break up with a knife
