My mom made this salsa—the recipe is actually from a friend of hers who won first place in a recent salsa contest with it. One bite and you’ll see why!
1 can pineapple rings, drained
1 medium red onion
2 cloves garlic, minced
1/3 of a bunch of fresh cilantro, chopped fine
1 chili pepper of choice, such as an anaheim
Grill the pineapple rings about 5 minutes on each side. Chop up and combine with the other ingredients. So easy! Serve with tortilla chips and enjoy.
