Pioneer Woman's Chocolate Sheet Cake

The Pioneer Woman wasn't lying when she said this is the best chocolate sheet cake ever. This is my new favorite cake to make. It's so easy and the ingredients are things most of us have on hand anyway.

Pioneer Woman's Chocolate Sheet Cake


For cake:
2 cups flour
2 cups sugar
1/4 teaspoon salt
2 sticks butter
4 heaping tablespoons cocoa
1 cup boiling water
1/2 cup buttermilk
2 beaten eggs
1 teaspoon baking soda
1 teaspoon vanilla

For icing:
1/2 cup finely chopped pecans
1 3/4 sticks butter
4 heaping tablespoons cocoa
6 tablespoons milk
1 teaspoon vanilla
1 lb minus 1/2 cup powdered sugar


Combine in a mixing bowl:
2 cups flour
2 cups sugar
1/4 teaspoon salt
In a saucepan, melt:
2 sticks butter
Add 4 heaping tablespoons cocoa. Stir together.
Add 1 cup boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.

In measuring cup, pour 1/2 cup buttermilk.
2 beaten eggs
1 teaspoon baking soda
1 teaspoon vanilla
Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes. (Mine took longer.)

While cake is baking, make icing:
Chop 1/2 cup pecans finely.
Melt 1 3/4 sticks butter in a saucepan.
Add 4 heaping tablespoons cocoa, stir to combine, then turn off heat.
6 tablespoons milk
1 teaspoon vanilla
1 lb minus 1/2 cup powdered sugar
Stir together.
Add pecans, stir together, and pour over warm cake.

Um, yeah, I couldn't wait until it had cooled all the way.

This is THE chocolate cake...ooohhh the chocolaty goodness of it! I'm staring at the pics and making low moaning sounds :drool:...thank goodness I'm at husband is wondering what is wrong with me LOL ;) I must make this very soon!!

OMG! :drool: I just came back home from the restaurant and I was like "what didn't I get dessert?", but now it really is a state of emergency. I need this now! I'd skip the nuts too btw. I'm not a big fan. I'm happy you posted a picture of the inside. Twinkle, you can still make this cake again, we could use some step-by-step pictures of the process. ;)

OK hats off to the Pioneer Woman for putting this recipe out there and to Twink for trying it first and raving about it. :medal: This cake is simply TO DIE FOR and really should be called "Heaven's Cake" because it simply is a piece of heaven when you bite into it. I made it tonight and although it isn't quick and easy it is totally worth the mess and time. Here is my end result. (I did not add nuts to my icing because the boys don't like them).

I've already made this...under the name of home made chocolate...but it wasn't solid so, of course, i took it as a complete failure... from now on , I shall name it "a cake" and therefore, it will be ok if it's too softy :)

I'd never heard of Pioneer Woman until just now. I just got sucked in to her website. That lasagna she makes looks DEEEVINE! As does the chocolate cake that made me drool all over my keyboard.

:DROOL: This just looks amazing. Ok, the only thing I have trouble with and don't usually have on hand is buttermilk BUT this is what I've googled before in order to substitute: Buttermilk Substitute For each 1 cup buttermilk called for in a recipe, use 1 cup plain yogurt or sour cream; OR 1 tablespoon lemon juice or vinegar plus enough milk to make 1 cup; OR 1 cup milk plus 1 3/4 tablespoons cream of tartar; OR 1/4 cup buttermilk powder and 1 cup water. I've done the 1 TBS vinegar with milk and my cupcakes were divine!!! Maybe that will help someone who also can't find it readily. Thanks for this!! :)

Wow! And LisaK the cinnamon would be a nice touch. My mom used to make a chocolate cake sort of like this, with all the ingredients mixed right in the pan you bake. It had a little vinegar which kept it really moist and she called it Wacky Cake. I can't wait to make the Pioneer Woman's cake!

That looks so :drool: I love this cake. It is heaven. My sister makes it the same way at every holiday but she puts cinnamon in the cake batter.
