My boys love these for Halloween. Jake is student of the week this week, so he had to take a snack to school for his entire class today. I made these last night for them.
1 package regular marshmallows
1/2 stick butter
1 tsp. vanilla
3 bags of popped popcorn (or about 5-6 cups if you don't take the shortcut of using microwave popcorn)
Any type of candies, food coloring, etc... you'd like to use with it. (optional)
Melt marshmallows and butter together in a large pot on oven over medium heat, stirring constantly. Once melted, stir in vanilla. Add food coloring, candies, or anything else you may be using in your popcorn balls.
As the marshmallows and butter are melting, pop 3 bags of popcorn. Add popcorn to a large bowl. When the marshmallow and butter is melted, pour slowly over popcorn. Stir. Butter hands and form balls out of the popcorn mixture (it will be warm). Eat immediately or wrap individually in plastic wrap.
Makes 2-3 dozen depending on how big you make your balls.
This recipe keeps them soft for days. I like it better than the harder popcorn balls you usually find. I wish I could remember where the recipe come from!
