Puffy Oven Pancakes
Karma gave me this recipe and I haven't tried out yet but it sounds delicious! 
Puffy Oven Pancake
2 Tablespoons butter or stick margarine
2 large eggs
1/2 cup all purpose flour
1/2 cup milk
1/4 teaspoon salt
Lemon juice and powdered sugar or cut up fruit, if desired
1. Heat oven to 400. Melt butter in pie plate, 9 X 1 1/4 inches, in oven; brush butter over botton and side of pie plate.
2. Beat eggs slightly in medium bowl with wire whisk or hand beater. Beat in flour, milk, and salt just until mixed (do not over beat or pancake may not puff) Pour into pie plate.
3. Bake 25 - 30 minutes or until puffy and deep golden brown. Serve immediately sprinkled with lemon juice and powdered sugar or topped with fruit.
The variations are the apple oven pancake or the double oven pancake.. I haven't tried either yet. It says its more like a popover than a pancake and it is.. To me it tasted sort of like a combo of a crepe and a pancake and we served it warm with organic maple syrup.. super easy & delish
