Pumpkin Cacao Bread


Around the holidays I love some simple sweet quick breads. I wanted something warm, filling and chocolately but I couldn’t let go completely and make a full on dessert so I settled on something decadent made of healthy and quasi-healthy ingredients. This bread is filling, tasty, and perfect for Thanksgiving breakfast. Freeze the rest for a healthy snack anytime.

INGREDIENTS:

1.5 cups whole wheat flour

1 cup all purpose flour

⅔ cup rolled oats

1 tsp baking powder

2 tsp baking soda

1 tsp salt

2 tsp pumpkin pie spice

2 eggs

½ cup raw sugar

½ cup brown sugar

1 can (15 oz) pumpkin puree (NOT pumpkin pie filling)

½ cup olive oil

½ milk (I used almond milk)

½ cup cacao nibs (or chocolate chips)

½ cup pecans, chopped
