Quinoa Apple Bread (Vegan)


Ever baked with quinoa? You must give it a try! Healthy, nutty quinoa is the perfect addition to baked goods, particularly this filling breakfast bread. It's vegan as well, substituting olive oil and apple sauce for butter and eggs. Optional walnuts add some crunch and additional protein.

INGREDIENTS:

  • 1 cup whole wheat flour
  • 3/4 cup rolled oats, divided
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup + 1 tbsp olive oil
  • 1/2 cup raw sugar
  • 1/2 cup unsweetened apple sauce
  • 1 tsp vanilla extract
  • 1 cup cooked quinoa, cooled (approx 1/3 cup dry)
  • 1 medium granny smith apple, cored and diced
  • 1/3 cup raw walnuts, chopped
  • 1 tbsp brown sugar
