REAL EASY PASTA SALAD


I have to tell you I really don't do a lot of accurate measuring when I cook, so I hope this makes some sense to you. The measurements are "approximate", but with this recipe, it doesn't matter all that much. Add what you like.

2 boxes pasta (any kind will do; I personally like funky pasta like fiori or rotelli but penne is also good)
1 cuke
1 green pepper
1 red pepper (or yellow or orange if you prefer--they all taste the same anyway)
1 cup cherry or grape tomatoes
1 cup shredded carrots
1 cup shredded cheese or cubed cheese (I like Co-jack for this recipe but you can use whatever)
1 cup shredded purple cabbage
1 cup broccoli
1 cup cauliflower
1 bottle of Russian dressing (or something else you like better)
1/2 tsp. Black Pepper
2 tbsp. Oregano

Cook the pasta, chop up all the vegetables (I like my broccoli and cauliflower really small and my cherry tomatoes chopped in half so they don't squirt so much, but whatev!!!), mix it all in a big bowl with the dressing, pepper, and oregano, and Yum Yum a very easy pasta salad appears. Have at it. Smiling

jg that sounds really simple and delish! i was curious what a cuke was too...hahaha im a goof! i love pasta salad, potato salad, mac salad, taco salad, salad in general! haha i shall try this next time i make pasta salad i am in the mood for pasta salad lately so it is perfect timing! nummy nummy!

My youngest who is 4 is so picky -- he will not eat any veggies, rice, meat, mac & cheese, potatoes, noodles, soup, sandwiches... I could go on and on. He is allergic to peanuts, so I have to watch that all the time. I should just say this is what he does eat -- all dairy -- loves cheese and yogurt, turkey hot dogs, cheese pizza, spaghetti O's, chocolate chip waffles, McD's nuggets and fruit (just about any fruit). That's about it and he never eats very much. My pedi told me not to worry because he has never known a child to starve himself to death and that he will eat when he wants to. I have lots of anxiety over this but I am slowly letting it go. We don't force him to eat, never have that just causes control issues. Except for milk -- I make him drink about 1/2 cup every night so I know he has had some protein.

I've never been partial to veggies, or porridge, and have to really force myself to eat them. I blame it all on my southern fried upbringing. Seriously, until I moved out of the south the only way I ate oatmeal was in the form of a cookie. We always had bacon, eggs, biscuits and gravy or sugary sweet cereals for breakfast. For dinner it was always something fried. Veggies rarely made an appearance at our table and when they did they were fried as well. I've struggled with my weight because I didn't start out with good eating habits and don't want that for my kids.

Kudos to you Twink! My kid is weird. He loved veggies for the first two years. Its all gone downhill since then. LOL Night t0x!!

Thats great twink! I started mikey off with rice cereals then mixed. Of course all along his grandparents were giving him fruit juice reeses cups at 2 months old.... Main reason this child is not allowed near them lol ok so it wont work but Ill dream night ladies have sweet dreams

Both my kids love veggies and milk and even fish. They rarely eat sweets and don't even ask for them. They will of course eat it if it's offered to them! When they were big enough to start on food our "baby nurse" told us to start them off with porridge and mashed potatoes with no seasoning (not together of course) and then slowly introduce more veggies and then meat and fish. She recommended waiting as long as possible before giving them fruit because once they try something sweet they will refuse to try anything else. It worked for us.

my younger 2 are to the point where i can USUALLY get away with giving 3 choices and they will pick one. if they are tired it's more difficult. but i can usually get them to eat mandarin oranges, peaches or an apple once a day and then broccoli, corn or green beans once every 2 days. they love meat, chicken, nuts, all that stuff. seems like i am forever making them something to eat. i asked them last weekend how they went all morning at school and they looked puzzled (so now i'll prolly get a note home saying something about that, lol).

lol, jenn., my son hated potatoe salad until he finally tasted 'my' recipe for it, now he pigs out on it so much it's not even funny!!!!!!!! 3 helpings ...easy*
