Bottoms Up | Ginger Carrot Cocktail

Savory Filipino Mussel Ginger Soup (Tahong ng Sabaw). My boyfriend likes this a lot :P

My boyfriend really loves this, it's one of the few filipino recipes that I know and do often. Try frozen new zealand mussels if you don't have any fresh ones on hand. Either way the key is to not use too much water or you'll get a watered down taste of the mussels, some put water bit by bit and taste as they go. Eat this with a small bowl of jasmine rice and pour the soup onto it and slurp the rice and soup together.

1 1/2lbs Fresh Mussels (cleaned)
1 med or 1/2 Large sweet onion sliced
3 cloves garlic diced
1 thumb sized ginger finely sliced
3 Roma tomatoes chopped into chunks
1 tbsp vegetable oil
2-3 tbsp fish sauce (add more if you want in the end)
6-7 cups water ( just enough to cover, less water = stronger flavor)
3 big handfuls of fresh Spinach

Heat the oil in a medium, heavy-bottomed pot over medium-high heat. Add the onion, garlic, and ginger, and saute until the onion is translucent and they're fragrant.
Add the chopped tomatoes, and saute until the tomatoes begin to soften, about 2 minutes.
Add half the water and fish sauce and heat to a boil. Add the mussels and the remaining water, just enough to BARELY COVER! Cook till the mussels open over medium high heat. Right when they're done, toss in the spinach (as much as you want, BF loves a LOT of spinach), stir and season with pepper and more fish sauce if you want.
Take of the heat and ENJOY!

And as usual soup tastes better over time so enjoy the leftovers ;)

I've never had dinuguan and I personally don't choose to eat it. But my fam LOVES it - I'm the only one I guess who doesn't! :OOPS: BUT I love me some sinigang anytime... & adobo! Those are probably my favorites. :DROOL: & thanks for the great tips!! I think I might just suprise them with this... :D ...actually I don't think I can narrow it down to just two favorites because now I'm thinking about Pancit! :P

omg totally! when my bf first ate this he only put a little soup in his rice and i was like WRONG!!!!! put more! he's chinese/taiwanese and he also eat dinuguan (spelled?) and pork sinigang when my mom makes it. and he's even made sinigang. cooking mussels is really easy, clean the beards off, rinse, put them in the pot of hot water, wait for them to open fully and done! :D you can also try those frozen boxes of new zealand mussels, my mom usually uses those :D but fresh ones are delicious!

LOL You're definitely making me crave mussels - it's been sooo long! I'm a bit scared about cooking the mussels though... only because I've never done so! :P I need to find a good place that sells some... But what is making me really hungry is the soup over the rice!! :DROOL: That sounds perfect!!!

lol make it! just don't add too much water :D like for the longest time i totally didn't know how to make this right! like i didn't add patis, i didn't chop the ginger enough, i didn't use enough ginger, i didn't sautee the onions, ginger and garlic! sauteeing them is like the secret key i didn't find till late and patis! oh how patis is important! lol, i would give my bf watery bad version for a while and then i GOOGLED filipino mussel soup and found some recipes and WALLLAH! now David is like craving this stuff whenever there are mussels at the store, he seriously loves it and it's as good as my mom makes it! so i'm happy :D it's always awesome to learn something that your parents makes :D that way you're always reminded of home

yeah i love patis! i'm always adding a lot in the end! this is the kind of filipino comfort food i'm always 'inhaling' when i get home so i'm glad to be able to make this for me and the bf whenver OH YEAH! :D i totally forgot, you can add some diced green onions in the end! duh. lol
