Delicious and Simple Southwestern Cobb Salad
I love to try a traditional salad with a new twist. A traditional cobb is full of eggs and lots of bacon while it might be tasty it can have upwards of 50 grams of fat per serving. Way to much for a single meal, but this Southwestern Cobb Salad had more zing and plenty of flavor with way less fat per serving. This version did have bacon but just enough to add flavor without going overboard. I used chicken rather than turkey since I had already some on hand and also used olive oil in my vinaigrette instead of canola oil. I will definitely be making this one again!
