Spicy Sesame Slaw


Do you hate mayo? Well then this is the slaw for you. Packed with fresh summer produce, this complete meal has everything you need: loads of healthy veggies, protein, fiber and healthy fats. Throw this together and you have the next few lunches and dinners ready.

Ingredients:

  • 1 head of green cabbage, shredded
  • 1 head of red cabbage, shredded
  • 1 cup of shredded carrots (approx 4 carrots)
  • 1/2 lb green beans, washed and trimmed
  • 1.5 cups frozen shelled edamame
  • 1/4 cup fresh cilantro, washed and chopped
  • 1/2 cup soy sauce
  • 1 tsp peanut butter
  • 1/4 cup sesame oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp rice wine
  • 1 tbsp chili oil
  • 1 tbsp ground ginger
  • 2 tbsp sesame seeds
