Swede, Potato and Lemon Thyme Dauphinoise

Every so often I have a habit of picking up a random vegetable. Generally something I've never cooked with before. It's fun picking up something unusual and trying to create a tasty dish for the family. My veg of choice this time round was the humble swede.

Swedes are a well known root vegetable found in British supermarkets. They have a purple skin and white flesh and originate from the cabbage family. As well as being are high in Vitamin A and C, they are also a good source of calcium, potassium and fibre. To me they taste like a sweeter potato but with the texture of a turnip.

I wanted to do something a bit different from the typical mash or roast and so decided to use them in my version of a dauphinoise. This is an easy layered side dish that can be enjoyed by the whole family.
