Tortilla bowls & taco salad

We eat lots of salads at our house. When we get take-out my daughter loves the taco salads that come in tortilla bowls. I wanted to try making those crispy bowls at home. Pretty easy.

Tortillas, burrito size (the bigs ones)
1 lb. of ground turkey (use lean ground beef, chicken or beans)
Taco seasonings, 1-2 Tblsps. depending on how spicy you like the meat
Iceberg lettuce, couple handfuls per person or I like to use the bag salad
Tomatoes, chopped
Black olives, sliced
Shredded cheddar cheese
Sour cream


Preheat the oven to 375 degrees. Place oven-proof bowls on a cookie sheet and fit tortillas into the bowls - like a coffee filter.

When the oven is preheated, place the cookie sheet on a lower oven rack and bake the tortillas for about 10 minutes. Watch them to make sure they don't burn along the edges.

Brown meat in a skillet. Drain any liquid/grease you don't want and add taco seasonings. Lower the temp and let it simmer, adding a little water if you want a soupier meat mixture.

After the tortilla bowls have browned a little, take them out of the oven-proof bowls and invert them onto the cookie sheet. Put them back in the oven to brown the bottoms a little. Should take about 5-7 minutes.

Remove the tortilla bowls from the oven and put one on each dinner plate. Fill with lettuce, top with taco meat, then add cheese & the other toppings you like.
