Turkey Burgers with Spring Mix, Avocado & Homemade Salsa

I stumbled upon this recipe (from allrecipes.com) for turkey burgers last week when I was faced with 2lbs of ground turkey in my fridge. The entire recipe made 8 patties, so I cooked 4 (2 for me, 2 for my significant other) and froze the rest. Topped with spring mix, a homemade tomato salsa and avocado slices, delish.
Ingredients (4 servings - 2 patties+topping each)
Turkey Burger Patties
- 2lbs (900g) lean ground turkey
- 2 tbsp + 2 tsp seasoned bread crumbs (I used Panko)
- 2 tbsp + 2 tsp diced onion
- 1 egg white, lightly beaten
- 2 tbsp + 2 tsp chopped fresh parsley
- 1 clove garlic, minced
- 3/4 tsp salt, 1/8 tsp pepper (I just eyeballed these two when making them)
Tomato Salsa
- 1 whole tomato, diced
- 1/2 red onion, diced
- 1 large garlic clove, minced
- 2 tsp dried basil
- 1 tbsp light feta cheese
- black pepper to taste
- small bunch of spring mix per serving
- 2 avocados, sliced (half avocado/patty)
Directions
- In a bowl, lightly beat the egg white. Add remainder of burger patty ingredients and mix thoroughly. Form into 8 patties and grill on a BBQ (or pan fry in a skillet on your stove) about 5 minutes/side or until fully cooked through.
- Meanwhile, combine all salsa ingredients in a bowl.
- To assemble, place 2 patties on a plate, top with spring mix, salsa and avocado slices. Enjoy!
