Veggie Pizza

I love this pizza--using fresh ingredients is key. It's so easy and fast, it'll be a breeze to make.

Veggie Pizza


2- 6.5oz boxes of Jiffy Pizza Crust mix
2 tsp olive oil
1C fresh spinach leaves
10 large fresh basil leaves, cut into strips
4 plum or roma tomatoes, sliced
3/4C red onion, chopped
1- 14oz can artichoke hearts, coarsely chopped
2C Goat cheese feta


Prepare pizza dough according to package instructions. Grease a pizza pan with butter and add some to your hands. Spread the dough on pizza pan. Brush olive oil onto crust. Bake at 425 for 7-9 mins (until it puffs up and just begins to brown).
Once dough is done, layer with spinach leaves, basil, tomatoes, onions, artichokes and goat cheese. Bake until the crust begins to brown--about 13 minutes. Serves 6.
