What to serve with Chicken and Dumplings?

I'm having a get together at my house this thursday and my husband has to be out of town until thursday evening so I'll be here alone with my two toddlers to get ready. So I was thinking of making Chicken and Dumplings on wed. night but I'm not sure what else to serve with them. I might possibly serve cornbread. Does anyone else have any good ideas? Including a good dessert idea.

when, I'm waithing on the dumplins to thicken up and it ocurred to me that some hoe cakes would be good. This is flour and corn meal (2 to one for the corn meal,, then fry it like a flat panncake. They were called hoe cakes because workers in the field would wash their hoes and use them for a griddle on an open fire. These are also great with your black eyed peas - especially on New Years Day.

I usually put 1/2 a cup of peas in my dumplin's anyway. The fam likes peach pie or cobbler with ice cream. Add a tall glass of sweet iced tea and what else could one ask for? Well, maybe a nap when you finish. . .

Thanks for all the suggestions guys! I told my husband that I was planning to cook chicken n'dumpings and he said that he would rather have a soup. So I'm making Mac n'cheeze soup with ham sandwiches and a fruit salad. I think it will turn out great. Thanks again!

A nice green salad would be delicious as well. Spinach, pears, nuts, maybe a cheese, with an easy vinaigrette. For dessert, I suggest a pumpkin cake. Hope the party goes well!

If you don't have time to make fresh green beans or don't like the taste, here is a trick to make the can taste better. Depending on how many people you have coming over, take 2-5 cans of whole GB, do not drain and put in a large covered pot. Add 1 med onion (2 if using 5 cans) and 2 slices of bacon for each can you use. Bring to a boil, then let simmer until most of the liquid had cooked out. I always remove the bacon before serving. My general rule is usually 1 can for 2 people. Also salad is a good side dish.

I always serve green beans with my chicken and dumplings. And usually for dessert since chicken and dumplings is a comfort food I try to serve a Pie.
